Pork Chops And Rice Casserole With Tomatoes

Ingredients 4 pork chops about 3 4 inch thickolive oilsalt and pepper2 cups chicken broth1 cup uncooked long grain rice1 4 cup chopped green bell pepper3 green onions chopped1 tomato.
Cover and bake at 350 f for 60 to 70 minutes until chops are tender and rice is done. Cover the dish tightly with foil and bake for about 2 hours until rice is tender. Pour tomatoes into casserole around chops so as not to disturb the rice. Cover dish with foil and bake for 45 minutes.
Add rice and onion to skillet and cook stirring constantly for 3 to 4 minutes or until rice has started to brown and onion has softened. Spoon rice into and around the pepper rings. Cover and simmer 45 minutes or until rice and chops are tender. Sprinkle onion soup mix over the pork chops to taste.
Pat the pork chops dry. Pour stewed tomatoes around and atop rice. In a large skillet or sauté pan over medium high heat brown pork chops in the olive oil. Place pork chops on top of rice.

Stir in tomatoes and seasoned salt. Transfer chops to casserole. Place on top of the rice. Water dredge pork chops with salt pepper and paprika.
If you don t like a strong onion flavor or if you don t want the chops too salty use just a portion of the seasoning not the whole packet. On the chops layer the sliced onion green pepper and tomatoes then sprinkle with seasonings and pour beef broth over all. Add additional stewed tomatoes or tomato juice for extra moisture if needed. Top each with green pepper ring then onion slice then mound of par boiled rice dividing full amount equally.
Add water to skillet. I use bone in pork chops in this one pot pork chop and rice casserole as well as boneless. I especially use boneless chops when i have more people for dinner as more chops fit into a large dish. Place 1 tablespoon of rice on each onion topped pork chop.
